Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand or homemade)

1 cup crushed BBQ potato chips (for coating)

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking oil for frying or cooking spray for baking

Instructions

Prepare the Chicken: In a medium bowl, combine the cubed chicken with the BBQ sauce. Make sure all pieces are evenly coated. Let it marinate in the refrigerator for at least 30 minutes to absorb flavor.

Set Up Breading Station: While the chicken is marinating, set up your breading station: In one bowl, place the all-purpose flour. In another bowl, whisk the eggs and add garlic powder, onion powder, paprika, salt, and pepper. In a third bowl, add the crushed BBQ potato chips.

Coat the Chicken: Once the chicken has marinated, take each piece, dust it lightly with flour, dip it into the egg mixture, and then coat it fully with the crushed BBQ potato chips. Press the chips onto the chicken to ensure they adhere well.

        Cooking Options:

          - Frying: Heat a generous amount of cooking oil in a large skillet over medium-high heat. Once hot, add the breaded chicken nuggets in batches. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place them on a paper towel-lined plate to drain excess oil.

            - Baking: Preheat the oven to 400°F (200°C). Arrange the coated chicken nuggets on a baking sheet lined with parchment paper. Lightly spray the nuggets with cooking spray for extra crispiness. Bake for 20-25 minutes, flipping halfway through, until golden and cooked through.

Serve: Once cooked, let the nuggets cool slightly and serve them warm with extra BBQ sauce for dipping.
