Ingredients
  

  • 1 whole chicken cut into pieces
  • 10 cups water
  • 2 medium carrots sliced into rounds
  • 2 stalks celery chopped
  • 1 large onion quartered
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon ground cumin
  • 1 leaf bay leaf
  • to taste fresh cilantro chopped, for garnish
  • to taste lime wedges for serving

Instructions

  • In a large pot, place the chicken pieces and pour in the water. Bring to a boil over medium-high heat.
  • Once boiling, reduce heat to medium-low and skim off any foam.
  • Add carrots, celery, onion, garlic, salt, black pepper, cumin, and bay leaf. Stir to combine.
  • Cover and let simmer for about 1 hour, until chicken is cooked and tender.
  • Remove chicken pieces and set aside to cool. Discard the bay leaf.
  • Shred the chicken meat from the bones and return it to the pot.
  • Taste and adjust seasoning with salt or pepper if needed. Simmer for an additional 10 minutes.
  • Serve hot, garnished with cilantro and lime wedges on the side.

Notes
