2 large chicken breasts

1/4 cup honey

Juice of 2 limes

2 cloves garlic, minced

1 teaspoon chili powder

Salt and pepper, to taste

1 cup jasmine rice

2 cups chicken broth

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup red onion, diced

1/2 cup cherry tomatoes, halved

Lime wedges, for garnish

Marinate the Chicken: In a medium bowl, combine the honey, lime juice, minced garlic, chili powder, salt, and pepper. Add the chicken breasts and let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for maximum flavor.
