2 cups fresh strawberries, hulled and halved

3 tablespoons honey

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 teaspoon pure vanilla extract

A pinch of sea salt

1 tablespoon unsalted butter (optional, for richness)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a medium mixing bowl, combine the halved strawberries, honey, lemon juice, lemon zest, vanilla extract, and a pinch of sea salt. Toss gently to coat the strawberries evenly in the mixture.

      Spread the strawberries in a single layer on the prepared baking sheet. For extra richness, you can dot the top with small pieces of unsalted butter.
