Ingredients
  

2 large sweet onions, finely chopped

3 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1/4 cup fresh chives, chopped (for garnish)

Tortilla chips or baguette slices, for serving

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the chopped onions, salt, and black pepper. Cook until the onions are very soft and caramelized, about 20-25 minutes, stirring occasionally.

    Once the onions have caramelized, stir in the garlic powder and smoked paprika. Cook for an additional 2 minutes until fragrant. Remove skillet from heat and let cool slightly.

      In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.

        Add the caramelized onion mixture to the cream cheese mixture, followed by the shredded mozzarella and cheddar cheeses. Stir until fully combined.

          Preheat your oven to 350°F (175°C). Transfer the dip mixture into an oven-safe baking dish and spread evenly.

            Bake in the preheated oven for about 25-30 minutes, or until the dip is bubbly and golden on top.

              Remove from the oven and let it cool for a few minutes. Garnish with fresh chives before serving.

                Serve warm with tortilla chips or slices of baguette for dipping.
