Ingredients

1/2 cup unsalted butter (plus extra for greasing)

1 cup high-quality dark chocolate (chopped)

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

1/2 cup all-purpose flour

A pinch of salt

Cocoa powder (for dusting)

Optional: vanilla ice cream or whipped cream for serving

Instructions

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder, shaking off any excess. This will ensure that the lava cakes come out easily after baking.

In a microwave-safe bowl, combine the unsalted butter and chopped dark chocolate. Microwave on high in 30-second intervals, stirring in between until melted and smooth. Allow it to cool slightly.

In a large mixing bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously until fully incorporated.

Sift in the all-purpose flour and a pinch of salt, folding gently with a spatula until no flour streaks remain. Be careful not to overmix.

Divide the batter evenly among the prepared ramekins.

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft and slightly wobbly.

Remove from the oven and let them sit for 1 minute. Carefully run a knife around the edges to loosen the cakes and invert them onto individual plates.

Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy the deliciously gooey molten center!
