Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

1/2 cup mini marshmallows

1/2 cup chocolate chips

1/2 cup crushed graham crackers

Extra mini marshmallows and chocolate chips for topping

Optional: Whipped cream for serving

Instructions

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, combine the milk, egg, and melted butter, mixing well.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are fine.

Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers.

Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.

Pour 1/4 cup of the pancake batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.

Repeat with the remaining batter, keeping the cooked pancakes warm in the oven if desired.

Stack the pancakes on plates, then top with extra mini marshmallows, chocolate chips, and whipped cream if using.

Drizzle with chocolate sauce or melted chocolate for an extra indulgent touch before serving.
