For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1 tsp salt

1/2 cup whole milk, warmed

1/2 cup unsalted butter, melted

2 large eggs

For the Filling:

1/2 cup brown sugar, packed

1 tbsp ground cinnamon

1/4 cup unsalted butter, softened

2 large apples, peeled, cored, and finely diced (Granny Smith or Honeycrisp work well)

1/2 cup walnuts or pecans, chopped (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

A pinch of salt

1-2 tablespoons milk (as needed for consistency)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.

      - In another bowl, whisk together the warmed milk, melted butter, and eggs.

        - Gradually pour the wet ingredients into the dry ingredients, mixing until a dough forms.

          - Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

            - Place the dough in a greased bowl, cover with plastic wrap or a clean towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

              Make the Filling:

                - In a small bowl, mix the brown sugar and ground cinnamon together.

                  - Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16x12 inches.

                    - Spread the softened butter over the dough, then sprinkle the cinnamon-sugar mixture evenly over it.

                      - Distribute the diced apples and nuts (if using) across the filling.

                        Roll and Cut:

                          - Starting from one long edge, tightly roll up the dough into a log. Pinch the seam to seal it.

                            - Cut the log into 12 equal slices and place them in a greased 9x13 inch baking dish.

                              - Cover the rolls with a towel and let them rise for another 30-45 minutes until puffy.

                                Bake:

                                  - Preheat the oven to 350°F (175°C). Once the rolls have risen, bake them for 25-30 minutes or until golden brown.

                                    Prepare the Frosting:

                                      - In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.

                                        - Gradually add the powdered sugar, vanilla extract, and salt, mixing until smooth. Adjust with milk as necessary to reach your desired frosting consistency.

                                          Frost and Serve:

                                            - Once the cinnamon rolls are out of the oven, let them cool for about 10 minutes. Then spread the cream cheese frosting on top while they are still warm.
