1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1 ripe peach, diced

1 tablespoon chia seeds

1 tablespoon honey or maple syrup (optional)

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 cup Greek yogurt (optional, for added creaminess)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, chia seeds, cinnamon, and vanilla extract. Mix well to ensure everything is evenly distributed.

    Pour in the almond milk and stir until combined. If using, add honey or maple syrup at this step to sweeten the mixture according to your taste.

      Gently fold in the diced peaches, reserving a few pieces for topping later.

        If you’d like a creamier texture, stir in the Greek yogurt until combined.

          Divide the oat mixture into two jars or small airtight containers. Seal them tightly and refrigerate overnight (or for at least 4 hours) to allow the oats to soak up the liquid and soften.

            The next morning, give the oats a good stir. Top with the reserved peach pieces and a sprig of fresh mint for garnish if desired.

              Serve cold or heat them slightly in the microwave if you prefer warm oats.
