2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup unsweetened applesauce

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 ½ cups diced peeled apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

½ teaspoon ground nutmeg (optional, for extra spice)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg (if using), and salt until combined.

      In a separate bowl, mix the applesauce, vegetable oil, eggs, and vanilla extract until well blended.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are okay.

          Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

            Use a spoon or ice cream scoop to fill each muffin cup about ¾ full with the batter.

              Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

                Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
