1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

½ cup vegetable oil

1 cup buttermilk (or milk + 1 tablespoon lemon juice)

1 teaspoon vanilla extract

2 cups peeled, diced apples (about 2 medium apples; Granny Smith or Honeycrisp work well)

½ cup chopped nuts (optional; walnuts or pecans)

½ cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with cooking spray.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined. Set aside.

      Mix Wet Ingredients: In a separate medium bowl, beat the eggs, then add the oil, buttermilk, and vanilla extract, stirring well until smoothly combined.

        Combine Mixtures: Gradually add the wet ingredients to the dry mixture, stirring gently until just combined (do not overmix—lumps are fine).

          Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed in the batter.

            Scoop into Muffin Tin: Using a scoop or spoon, fill each muffin cup about 2/3 full with the batter.
