Ingredients
  

  • 8 ounces elbow macaroni
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • freshly ground black pepper
  • chopped fresh parsley

Instructions

  • In a large pot, bring 4 cups of water to a rolling boil and add salt and macaroni.
  • Cook the macaroni until al dente, then drain and set aside.
  • In the same pot, melt the butter over medium heat and whisk in the flour for 1-2 minutes.
  • Gradually add the milk while whisking to prevent lumps, cooking until thickened.
  • Stir in Dijon mustard, garlic powder, onion powder, and cayenne pepper.
  • Lower heat and add cheddar and Parmesan cheese, stirring until melted and smooth.
  • Combine the drained macaroni with the cheese sauce, stirring to coat evenly.
  • Season with black pepper and garnish with parsley if desired.
  • Serve immediately while hot.

Notes

For a spicier kick, add more cayenne pepper to taste.
