4 large flour tortillas

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup pickled jalapeños, diced (adjust to your spice preference)

1/2 cup cooked and crumbled bacon (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon fresh cilantro, chopped (for garnish)

Olive oil or cooking spray (for the skillet)

Prepare the Filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, diced jalapeños, cooked bacon (if using), garlic powder, and onion powder. Mix until well combined and smooth.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface or cutting board. Spread a generous portion of the cheese mixture onto one half of the tortilla. Fold the other half of the tortilla over to cover the filling.

      Cook the Quesadillas: Heat a skillet over medium heat and add a little olive oil or spray with cooking spray. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat the process with the remaining tortillas and filling.

        Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and garnish with fresh cilantro. Serve with salsa, sour cream, or guacamole on the side for dipping.
