8 oz fettuccine or spaghetti

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 red bell pepper, sliced

1/2 cup onion, diced

1/2 cup coconut milk

1/2 cup heavy cream

2 tbsp Jamaican jerk seasoning

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Lime wedges for garnish

Grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 2-3 minutes until fragrant.

      Add Bell Pepper and Shrimp: Stir in the sliced red bell pepper and continue to cook for another 2 minutes. Then, add the shrimp and cook until they turn pink, around 3-4 minutes, stirring frequently.

        Create the Sauce: Reduce the heat to low and add the Jamaican jerk seasoning, coconut milk, and heavy cream. Stir well until all ingredients are combined and the sauce is heated through.

          Combine with Pasta: Add the cooked pasta to the skillet, tossing it in the sauce until evenly coated. Cook for an additional 2-3 minutes to allow the flavors to meld together.

            Season and Serve: Taste and adjust seasoning with salt and black pepper. Remove from heat and stir in the fresh parsley.
