12 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 tablespoon butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 teaspoon allspice

1 teaspoon jerk seasoning (adjust for heat preference)

1 cup coconut milk

½ cup heavy cream

½ cup chicken or vegetable broth

1 cup cherry tomatoes, halved

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil and butter. Once melted, add the shrimp and season with salt, pepper, allspice, and jerk seasoning. Sauté until the shrimp turn pink (about 2-3 minutes). Remove shrimp from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the chopped onion and garlic, and sauté until softened (about 2 minutes). Add the sliced bell peppers and cook for an additional 3 minutes until they are slightly tender.

        Make the Sauce: Pour in the coconut milk, heavy cream, and chicken broth. Stir well and bring it to a gentle simmer. Season with salt and pepper. Allow the sauce to cook down for about 5 minutes until slightly thickened.

          Combine: Add the cooked pasta, cherry tomatoes, and shrimp back into the skillet. Toss everything together to coat the pasta and ensure that all ingredients are well mixed. If the sauce is too thick, stir in a bit of the reserved pasta water until your desired consistency is reached.
