2 cups fresh mozzarella cheese, shredded or diced

1 cup ricotta cheese

1/2 cup all-purpose flour, plus extra for dusting

2 large eggs

1/4 cup granulated sugar

Zest of 1 lemon

1 tsp vanilla extract

1/4 tsp baking powder

Pinch of salt

Vegetable oil, for frying

Powdered sugar, for dusting

Prepare the Cheese Mixture: In a large bowl, combine the shredded mozzarella and ricotta cheese. Mix well until the cheeses are evenly combined.

    Add Wet Ingredients: Stir in the eggs, granulated sugar, lemon zest, vanilla extract, and a pinch of salt until all ingredients are fully incorporated.

      Incorporate Dry Ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually fold this mixture into the cheese mixture until just combined, being careful not to overmix.

        Heat the Oil: In a large pot or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C). You can test the readiness of the oil by dropping a small piece of the batter in—if it sizzles and rises to the surface, it's ready.

          Form the Fritters: Using a tablespoon, scoop out portions of the batter and gently roll them into balls, lightly dusting each with flour to prevent sticking.

            Fry Until Golden: Carefully drop the fritters into the hot oil in batches, being careful not to overcrowd the pot. Fry for about 3-4 minutes on each side, or until golden brown and puffed up.

              Drain Excess Oil: Use a slotted spoon to remove the fritters from the oil and transfer them to a paper towel-lined plate to drain excess oil.
