Ingredients
  

1 lb ground beef or lamb (or a mix of both)

1 small onion, finely grated

2 cloves garlic, minced

1/4 cup parsley, finely chopped

1/4 cup mint, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon ground cinnamon

1/2 teaspoon allspice

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tablespoons olive oil (for grilling)

Pita bread, for serving

Fresh vegetables like tomatoes and cucumbers, for garnish

Tahini sauce or yogurt, for serving

Instructions
 

Mix the Meat: In a large bowl, combine the ground meat with grated onion, minced garlic, parsley, mint, cumin, coriander, cinnamon, allspice, cayenne pepper, salt, and black pepper. Mix well until all ingredients are evenly distributed.

    Shape the Kebabs: With wet hands, take a portion of the meat mixture (about the size of a golf ball) and mold it around a skewer or shape it into an elongated patty. Repeat with remaining mixture. You can form them into ovals or compressed cylinders, depending on your preference.

      Preheat the Grill: Prepare your grill or grill pan over medium-high heat. Brush it lightly with olive oil to prevent sticking.

        Cook the Kafta: Once the grill is hot, place the kafta skewers on the grill. Cook for about 4-5 minutes on each side, or until browned and cooked through. Avoid overcooking to keep them juicy.

          Assemble & Serve: Serve the kafta hot, stuffed into pita bread with fresh vegetable slices. Drizzle with tahini sauce or yogurt. Enjoy while still warm.
