Ingredients
  

1 pound ground beef or lamb

1 small onion, finely grated

2 cloves garlic, minced

1 cup fresh parsley, finely chopped

1 teaspoon ground cumin

1 teaspoon ground cinnamon

1 teaspoon allspice

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional, for heat)

1 tablespoon olive oil (for grilling)

4 pita bread or flatbreads (for serving)

Fresh vegetables (tomatoes, cucumbers, or lettuce for serving)

Tahini sauce or yogurt (for drizzling and dipping)

Instructions
 

In a large mixing bowl, combine the ground meat with the grated onion, minced garlic, chopped parsley, cumin, cinnamon, allspice, salt, pepper, and red pepper flakes (if using). Mix well until all ingredients are evenly incorporated.

    Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.

      Preheat your grill or stovetop grill pan over medium-high heat. Lightly brush with olive oil to prevent sticking.

        Once the mixture is chilled, form it into elongated patties or skewers (if using skewers, make sure to soak wooden skewers in water for 30 minutes before use).

          Grill the kafta for about 5-7 minutes on each side, or until browned and cooked through (the internal temperature should reach 160°F/70°C).

            While the kafta cooks, warm the pita bread on the grill for about 1-2 minutes on each side until soft and pliable.

              Remove the kafta from the grill and let it rest for a few minutes.

                Serve the kafta in the warm pita, topped with fresh vegetables, drizzled with tahini sauce or yogurt, and enjoy!
