1 pound kielbasa sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 can (14.5 oz) diced tomatoes, undrained

6 cups chicken broth

2 cups fresh or frozen tortellini (cheese or meat-filled)

1 cup fresh spinach, chopped

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh parsley for garnish

Sauté the Veggies: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the garlic and cook for an additional minute until fragrant.

    Add the Vegetables: Incorporate the sliced carrots and chopped celery. Cook for about 5 minutes, stirring occasionally, until the veggies start to soften.

      Cook the Kielbasa: Add the sliced kielbasa to the pot and cook for 5-7 minutes until browned.

            Add Tortellini: Once the soup reaches a rolling boil, add the tortellini. Reduce heat to a simmer and cook for about 5-7 minutes or until the tortellini is cooked through and floats to the top.
