For the Meatballs:

1 pound ground beef or ground pork

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup low-sodium soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 large egg

1 teaspoon black pepper

1 teaspoon sesame seeds (optional, for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang (Korean chili paste)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon honey (optional)

Splash of lime juice

Pinch of salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large bowl, combine the ground meat, panko breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, sugar, egg, and black pepper. Mix until just combined.

      Shape the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them out evenly.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 15-20 minutes, or until they are cooked through and nicely browned.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, honey (if using), lime juice, and salt until smooth and well combined.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Transfer them to a serving platter, sprinkle with sesame seeds if desired, and serve with the spicy mayo dip on the side.
