Ingredients

1 whole chicken (3-4 lbs)

1/4 cup soy sauce

2 tablespoons sesame oil

1/4 cup brown sugar

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons gochujang (Korean red chili paste)

1 tablespoon rice vinegar

1 teaspoon black pepper

1 tablespoon sesame seeds

2 green onions, finely chopped

1 tablespoon honey (optional for glaze)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, gochujang, rice vinegar, and black pepper until well combined.

Marinate the Chicken: Place the whole chicken in a large resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Preheat the Rotisserie: If you are using a rotisserie, preheat your grill or rotisserie oven to medium heat (about 350°F or 175°C).

Insert the Spit: Remove the chicken from the marinade and let excess marinade drip off. Discard the marinade. Secure the chicken onto the rotisserie spit, tying the legs if necessary for stability.

Cook the Chicken: Place the rotisserie spit on the grill, close the lid, and cook for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown. Baste with remaining marinade or honey during the last 15-20 minutes for extra flavor and shine.

Rest and Serve: Once cooked, carefully remove the chicken from the rotisserie and let it rest for at least 10 minutes. Sprinkle with sesame seeds and chopped green onions before serving.

Enjoy: Slice and serve your delicious Korean BBQ rotisserie chicken with steamed rice, kimchi, or your favorite side dishes!
