Ingredients

1 cup all-purpose flour

1/2 cup water

1/4 tsp salt

1/2 tsp sugar

1/2 tsp baking powder

1 cup shredded cheese (mozzarella or a blend)

1 small green onion, finely chopped

1/4 cup kimchi, chopped (optional)

Vegetable oil for frying

Instructions

Mix the Batter: In a mixing bowl, combine the all-purpose flour, salt, sugar, and baking powder. Gradually whisk in the water until smooth.

Incorporate Cheese: Fold in the shredded cheese, green onion, and chopped kimchi (if using) into the batter until evenly distributed.

Heat the Pan: In a non-stick skillet, heat about 2 tablespoons of vegetable oil over medium heat.

Cook the Pancakes: Pour a ladleful of the batter into the skillet, spreading it gently into a circle. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 2-3 minutes until both sides are crispy and the cheese is melted.

Remove and Drain: Transfer the cooked pancakes to a paper towel-lined plate to absorb excess oil. Repeat with the remaining batter, adding more oil as needed.

Serve Warm: Cut into wedges and serve warm with a side of soy sauce or your favorite dipping sauce.
