1/2 cup cornmeal

1 cup water

1 cup shredded mozzarella cheese (or any melty cheese of your choice)

1/2 cup chopped green onions

1/2 cup grated carrots (optional, for added texture)

2 tablespoons vegetable oil (for frying)

Soy sauce or spicy dipping sauce (for serving)

Mix the Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, baking powder, and salt. Whisk together until evenly mixed.

    Add Wet Ingredients: Gradually add the water to the dry ingredients, stirring gently until you achieve a smooth batter. Avoid overmixing to keep the pancakes fluffy.
