400g shredded phyllo dough (kataifi)

250g unsalted butter, melted

500g ricotta cheese or unsweetened mascarpone

200g sugar

1 cup whole milk

1/2 cup heavy cream

1 tsp rose water (optional)

1 tsp vanilla extract

Chopped pistachios for garnish

Honey or sugar syrup for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Kataifi: Place the shredded phyllo dough in a large mixing bowl. Pour the melted butter over the phyllo and use your hands to gently toss it, ensuring every strand is coated in butter. This gives it that decadent, crisp texture.

      Layer the Base: In a greased 9x13 baking dish, take half of the buttered kataifi and press it down evenly to form the first layer.

        Cheese Filling: In another bowl, mix the ricotta cheese or mascarpone with half the sugar, whole milk, heavy cream, rose water, and vanilla extract until smooth. Spread this mixture evenly over the first kataifi layer.

          Top Layer: Take the remaining kataifi and layer it over the cheese mixture, squeezing and pressing slightly, so it melds together.

            Bake the Kunafa: Bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and crispy.

              Prepare the Syrup: While the kunafa is baking, in a small saucepan, combine equal parts of sugar (the remaining half) and water (about 1 cup). Bring it to a boil and simmer for 10 minutes. Remove from heat and stir in some honey for extra sweetness, if desired.

                Glaze and Serve: Once the kunafa is out of the oven, immediately drizzle the warm syrup over the hot kunafa. Let it soak for about 10 minutes. Garnish with chopped pistachios before serving.
