8 oz chow mein noodles

1 lb chicken breast, diced

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup broccoli florets

3 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup unsalted roasted peanuts

1/4 cup green onions, sliced

1 tablespoon cornstarch

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

Cook the Noodles: Bring a large pot of salted water to a boil. Add chow mein noodles and cook according to package instructions until tender. Drain and set aside.

    Prepare the Chicken: In a medium bowl, toss the diced chicken with cornstarch, a pinch of salt, and pepper until coated.

      Make the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sesame oil, sugar, and crushed red pepper flakes. Set aside.

        Stir-Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for about 5-7 minutes until golden and fully cooked. Remove the chicken from the skillet and set aside.

          Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of oil. Add garlic and ginger, sautéing for about 30 seconds until fragrant. Then add the sliced bell peppers and broccoli, stir-frying for 3-4 minutes until the vegetables are slightly tender but still crisp.

            Combine Everything: Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the mixture and stir well to coat all the ingredients.

              Add Noodles: Add the cooked chow mein noodles and toss everything to combine. Cook for an additional 2-3 minutes until everything is heated through.

                Finish with Peanuts and Green Onions: Stir in the roasted peanuts and green onions. Adjust seasoning with salt, pepper, or additional red pepper flakes, if desired.
