For the Cookie Base:

1 cup unsalted butter, softened

1 cup powdered sugar

1 tablespoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon salt

Zest of 1 lemon

For the Lemon Curd Topping:

4 large eggs

1 cup granulated sugar

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

1/4 cup unsalted butter, melted

1/4 teaspoon salt

For the Fresh Flavor Boost:

1/4 cup fresh mint leaves, finely chopped

Additional lemon zest for garnish

Extra powdered sugar for dusting

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.

    Make the Cookie Base:

      - In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.

        - Mix in the vanilla extract and lemon zest.

          - In a separate bowl, whisk together the flour and salt, then gradually add to the butter mixture until just combined.

            - Press the dough into the bottom of the prepared baking pan evenly.

              Bake the Base:

                - Bake the cookie base in the preheated oven for 15-20 minutes, until lightly golden around the edges. Remove and let cool slightly while preparing the lemon curd.

                  Prepare the Lemon Curd:

                    - In a medium mixing bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, melted butter, and salt until smooth.

                      - Pour the lemon curd mixture over the slightly cooled cookie base and bake for an additional 20-25 minutes, or until the curd is set but still slightly jiggles in the center.

                        Add Fresh Flavor Boost:

                          - While the lemon bars are still warm, sprinkle the finely chopped mint leaves over the top for an added burst of flavor.

                            Cool and Serve:

                              - Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the parchment paper out of the pan and cut into squares.

                                - Dust with additional powdered sugar and garnish each square with extra lemon zest.
