8 oz spaghetti or linguine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

4 cups fresh spinach, packed

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp, season with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from the skillet and set aside.

      Prepare the Flavor Base: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.

        Add Spinach and Lemon: Add the fresh spinach to the skillet and cook for 2-3 minutes, or until wilted. Stir in the lemon zest and juice, and mix well.

          Combine Ingredients: Return the cooked shrimp to the skillet along with the drained pasta. Pour in the reserved pasta water gradually, mixing until everything is well combined. Allow it to heat through for 1-2 minutes.

            Finish the Dish: Stir in the grated Parmesan cheese, adjusting seasoning with more salt and pepper if desired. Toss until the pasta is evenly coated and creamy.
