1/4 cup freshly squeezed lemon juice

1/2 cup extra virgin olive oil

1 teaspoon Dijon mustard

1 clove garlic, minced

1 tablespoon honey or maple syrup (optional for sweetness)

Salt and pepper to taste

1 tablespoon finely chopped fresh herbs (like parsley, basil, or dill) (optional)

Instructions
 

In a small mixing bowl or jar, combine the freshly squeezed lemon juice, Dijon mustard, minced garlic, and honey or maple syrup (if using).

    Whisk together or shake well until the ingredients are fully combined.

      While whisking continuously, slowly drizzle in the extra virgin olive oil to emulsify the dressing. (If using a jar, simply add the olive oil, seal, and shake vigorously.)

        Season the dressing with salt and pepper to taste.

          If desired, stir in the chopped fresh herbs for an extra layer of flavor.

            Taste and adjust the seasoning as necessary, adding more honey or salt depending on your preference.

              Store in an airtight container in the refrigerator for up to a week. Shake well before serving.
