Ingredients

2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup grated Parmesan cheese

1 cup Italian breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon unsalted butter

Fresh parsley, chopped (for garnish, optional)

Instructions

Marinate the Chicken: Start by placing the chicken breasts in a bowl and pouring the buttermilk over them. Make sure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating: In a shallow dish, combine the flour, garlic powder, onion powder, oregano, paprika, salt, and pepper. In another dish, mix the grated Parmesan cheese and Italian breadcrumbs until well combined.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Coat the Chicken: Remove the chicken from the buttermilk, allowing the excess to drip off. First, dredge the chicken in the seasoned flour, shaking off any excess. Then, dip it back into the buttermilk before coating it thoroughly with the Parmesan-breadcrumb mixture. Press firmly to adhere the coating.

Sear the Chicken: Heat olive oil and butter in a large oven-safe skillet over medium heat. Once hot, carefully add the coated chicken breasts and sear for about 4-5 minutes on each side, until golden brown.

Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serve: Remove the chicken from the oven and let it rest for a few minutes. Serve hot, garnished with fresh parsley if desired.
