Ingredients
  

1 medium head of cauliflower (or 4 cups riced cauliflower)

1 cup fresh spinach, chopped

1 cup mushrooms, sliced (such as cremini or button)

1 small onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese for garnish (optional)

Instructions
 

Begin by preparing the cauliflower. If using a whole head, remove the leaves and core, then cut it into florets. Use a food processor to pulse the florets until they resemble rice grains. Alternatively, you can find pre-riced cauliflower in stores.

    Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms are soft and browned.

        Stir in the riced cauliflower and season with Italian seasoning, salt, and pepper. Mix well and cook for about 5-7 minutes until the cauliflower is tender.

          Fold in the chopped spinach and cook for an additional 2-3 minutes, just until wilted.

            Remove from heat and adjust seasoning if necessary. Serve warm, garnished with grated Parmesan cheese if desired.
