1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

24 oz cream cheese, softened

1 cup powdered sugar

¼ cup sour cream

3 large eggs

Zest of 2 lemons

Zest of 1 lime

⅓ cup fresh lemon juice

⅓ cup fresh lime juice

1 cup fresh or frozen cherries, pitted and halved

½ cup pistachios, roughly chopped

Extra cherries and pistachios for garnish

Instructions
 

Preheat the oven to 325°F (160°C).

    Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let it cool.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and sour cream, beating well after each addition.

        Add the eggs: Beat in the eggs one at a time, making sure to mix until fully incorporated after each addition.

          Incorporate flavors: Add the lemon zest, lime zest, lemon juice, and lime juice. Mix until just combined, being careful not to overmix.

            Fold in fruits: Gently fold in the halved cherries and chopped pistachios into the cheesecake batter.

              Bake the cheesecake: Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-65 minutes, or until the edges are set and the center has a slight jiggle.

                Cool: Turn off the oven and leave the cheesecake inside for 1 hour to gradually cool. Then, remove it from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.
