Ingredients

1 lb ground beef (or a mix of beef and pork)

1 cup breadcrumbs (preferably seasoned)

1/2 cup grated Parmesan cheese

1/2 cup chopped onion

2 cloves garlic, minced

1/2 cup milk

1 large egg

1 cup finely chopped vegetables (carrots, bell peppers, and zucchini work well)

1 tbsp Worcestershire sauce

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper to taste

1 cup ketchup (for topping)

2 tbsp brown sugar (optional, for sweetness)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, chopped vegetables, milk, egg, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

Shape the Loaf: Transfer the meat mixture to a baking loaf pan, shaping it into a loaf. You can also shape it by hand and place it on a lined baking sheet.

Prepare the Topping: In a small bowl, mix the ketchup with brown sugar (if using). Spread the ketchup mixture evenly over the top of the meatloaf.

Bake: Place the meatloaf in the preheated oven and bake for 1 hour or until the internal temperature reaches 160°F (70°C).

Rest and Garnish: Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes. This helps to retain moisture. Garnish with freshly chopped parsley before slicing.

Serve: Slice and serve with your choice of sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
