Ingredients
  

2 chicken breasts, sliced into thin cutlets

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

1 cup fresh spinach

½ cup grated Parmesan cheese

8 oz fettuccine pasta (or your choice)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine following package instructions until al dente, then drain and set aside.

    Season the Chicken: While the pasta is cooking, season the chicken cutlets with salt and pepper on both sides.

      Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken cutlets and cook for about 4-5 minutes on each side until fully cooked and golden brown. Remove from the skillet and set aside.

        Create the Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about a minute until fragrant. Add the cherry tomatoes and cook until they start to soften, around 3-4 minutes.

          Add Cream and Sun-dried Tomatoes: Pour in the heavy cream and stir well, bringing it to a gentle simmer. Add the chopped sun-dried tomatoes and let it simmer for an additional 2-3 minutes to thicken slightly.

            Mix in Spinach and Cheese: Stir in the fresh spinach and let it wilt, about 1-2 minutes. Finally, add the Parmesan cheese and stir until melted and well combined.

              Combine Everything: Add the cooked pasta and chicken to the skillet, tossing everything together until evenly coated in the creamy sauce. Adjust seasoning if necessary.

                Serve: Divide the pasta into bowls, garnish with fresh basil leaves, and serve immediately.
