2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces fettuccine or your choice of pasta

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Prep the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and juices run clear. Remove from the skillet and set aside to rest.

      Make the Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes, followed by heavy cream and chicken broth. Stir to combine and bring to a simmer.

        Add Cheese: Lower the heat and mix in the grated Parmesan cheese until melted and well incorporated. Allow the sauce to simmer for 3-4 minutes until thickened slightly.

          Cook the Pasta: Meanwhile, cook the pasta according to package directions in a separate pot. Drain and reserve a cup of pasta water.

            Combine: Slice the cooked chicken into strips and return to the skillet with the sauce. Add the cooked pasta and a splash of reserved pasta water if needed to loosen the sauce. Toss to combine everything well.
