  • 1 teaspoon dried oregano

  • 1 cup frozen peas
  • 1 cup fresh baby spinach
  • 2 tablespoons extra virgin olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté for 3-4 minutes until translucent.
  • Add carrots and celery, cook for 5 minutes until softened.
  • Stir in thyme, oregano, paprika, salt, and pepper.
  • Add chicken breasts and chicken broth, bring to a boil, then simmer for 20-25 minutes.
  • Remove chicken, shred it, and return to the pot.
  • Stir in heavy cream, peas, and spinach, simmer for 5-10 minutes.
  • Adjust seasoning with salt and pepper as needed.
