Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and black pepper to taste

Instructions
 

In a large mixing bowl, combine the chickpeas, kidney beans, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, and parsley.

    In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.

      Pour the dressing over the bean and vegetable mixture. Gently toss everything together until the salad is evenly coated with the dressing.

        Taste and adjust the seasoning if necessary; feel free to add more salt, pepper, or oregano if desired.

          If using, sprinkle the crumbled feta cheese on top of the salad.

            Let the salad sit for at least 20 minutes before serving to allow the flavors to meld together.
