Ingredients
  

1 lb fresh salmon fillet, skin removed

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

2 green onions, finely chopped

1 clove garlic, minced

1 large egg, lightly beaten

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and black pepper to taste

Olive oil for frying

Instructions
 

Prepare the Salmon: In a food processor, add the fresh salmon fillet and pulse until it's finely chopped but not pureed. Transfer to a large mixing bowl.

    Mix Ingredients: To the bowl with salmon, add breadcrumbs, feta cheese, parsley, green onions, garlic, egg, lemon juice, oregano, salt, and pepper. Mix everything together until well combined.

      Form Patties: With your hands, form the mixture into small patties, about 2-3 inches in diameter. Place them on a plate and refrigerate for about 30 minutes to firm up.

        Cook the Patties: In a non-stick skillet, heat a few tablespoons of olive oil over medium heat. Once the oil is hot, carefully place the patties in the skillet, cooking them in batches if necessary. Fry for 4-5 minutes on each side, or until golden brown and cooked through.

          Serve: Remove the patties from the skillet and drain on paper towels. Serve warm with a side of tzatziki sauce and mixed greens.
