  • 8 oz pasta
  • 1 cup cherry tomatoes
  • 1 bell pepper
  • 1 medium zucchini
  • 1 cup fresh spinach leaves
  • 8 oz block of feta cheese
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper
  • Fresh basil leaves

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine cherry tomatoes, bell pepper, zucchini, and feta cheese. Drizzle with 2 tablespoons of olive oil and season with oregano, salt, and pepper.
  • Bake for 25-30 minutes until vegetables are tender and feta is soft.
