Ingredients
  

  • 1 lb boneless chicken thighs chopped
  • 1 cup plain yogurt
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons garam masala spice blend
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1 medium onion finely diced
  • 4 cloves garlic minced
  • 1 inch fresh ginger grated
  • 1 can crushed tomatoes
  • 1 cup heavy cream
  • 1 tablespoon sugar
  • to taste fresh cilantro leaves chopped
  • for serving cooked basmati rice or warm naan

Instructions

  • Marinate the chicken by mixing yogurt, lemon juice, garam masala, turmeric, red chili powder, and salt in a bowl. Add chicken and coat well, then refrigerate for at least 1 hour.
  • Heat 2 tablespoons of butter in a skillet over medium heat. Add marinated chicken and cook for 8-10 minutes until browned and cooked through. Remove chicken and set aside.
  • In the same skillet, add remaining butter, then sauté onion for 5-7 minutes until soft. Add garlic and ginger, cooking for another 1-2 minutes.
  • Pour in crushed tomatoes and simmer for 10 minutes, stirring occasionally.
  • Lower heat, add heavy cream and sugar, stirring to combine. Return chicken to skillet and simmer for 5-10 minutes until heated through.
  • Garnish with chopped cilantro and serve hot with basmati rice or naan.

Notes

Marinating the chicken overnight enhances the flavor.
