  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth
  • 1 cup additional beef broth
  • 1 large onion thinly sliced
  • 4 cloves garlic finely minced
  • 4 large carrots chopped into large chunks
  • 4 medium potatoes quartered
  • 2 tablespoons Worcestershire sauce
  • Fresh parsley chopped (for garnish)

Instructions

  • Pat the chuck roast dry and season with salt, black pepper, garlic powder, onion powder, thyme, and rosemary.
  • Heat olive oil in a skillet over medium-high heat and sear the roast for 4-5 minutes on each side.
  • Layer sliced onions, minced garlic, chopped carrots, and quartered potatoes in the bottom of the crock pot.
  • Deglaze the skillet with additional beef broth, scraping up browned bits, and simmer for 2 minutes.
  • Place the seared roast on top of the vegetables and pour the beef broth and Worcestershire sauce over it.
  • Cover the crock pot and cook on low for 8-10 hours or high for 4-6 hours until tender.
  • Remove the roast and vegetables, letting the roast rest for 10 minutes before slicing.
  • Garnish with chopped parsley and serve with the broth drizzled over the top.
