Ingredients

For the Cupcakes:

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup brewed coffee (cooled)

1/2 cup buttermilk

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

For the Coffee Buttercream:

1 cup unsalted butter (softened)

3-4 cups powdered sugar

2-4 tbsp brewed coffee (cooled)

1 tsp vanilla extract

1/2 tsp salt

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the cooled brewed coffee, buttermilk, vegetable oil, egg, and vanilla extract.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay!

Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Cool: Allow cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Make Coffee Buttercream: In a large mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing on low until combined.

Add Coffee and Flavor: Add brewed coffee, vanilla extract, and salt to the butter and continue to beat on medium speed until combined and fluffy. Adjust the consistency with more powdered sugar or coffee as needed.

Frost Cupcakes: Once the cupcakes are completely cooled, use a piping bag to frost them with the coffee buttercream.

Serve and Enjoy: Decorate the cupcakes with chocolate shavings or coffee beans if desired. Serve and enjoy your delicious moist coffee cupcakes!
