Ingredients
  

3 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons milk (or cream for extra richness)

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 tablespoon olive oil or butter

Salt and pepper, to taste

Optional: Cherry tomatoes, halved for garnish

Instructions
 

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    Stir in the diced mozzarella and fresh basil.

      Heat the olive oil or butter in a non-stick skillet over medium heat until hot.

        Pour the egg mixture into the skillet, tilting the pan to ensure an even layer.

          Cook for about 2-3 minutes until the edges start to set, using a spatula to gently lift the edges and allow uncooked egg to flow underneath.

            Once the eggs are mostly set (but still slightly runny on top), carefully fold one half of the omelet over the other.

              Cook for another 1-2 minutes until the omelet is fully cooked and the mozzarella is melted.

                Slide the omelet onto a plate, garnish with halved cherry tomatoes, and serve immediately.
