Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs (plus extra for topping)

1/2 cup unsweetened coconut flakes (toasted, optional)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

In a medium bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Set aside.

    In another bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

      Gently fold the whipped cream into the cream cheese mixture until fully incorporated and airy.

        Add the drained crushed pineapple, stirring carefully to maintain the light texture of the mixture.

          In a 9x9 inch square dish, sprinkle half of the graham cracker crumbs evenly on the bottom.

            Layer half of the cream mixture over the crumbs, smoothing it into an even layer.

              Repeat the layers with the remaining graham cracker crumbs and cream mixture.

                Finish with a sprinkle of the reserved graham cracker crumbs and toasted coconut flakes, if using.

                  Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
