2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon dried sage (or 1 tablespoon fresh, finely chopped)

1 tablespoon sugar

1 cup milk (dairy or plant-based)

1/4 cup olive oil (plus extra for greasing)

1 tablespoon butter (for brushing, optional)

Instructions
 

In a large mixing bowl, whisk together the flour, baking powder, salt, dried sage, and sugar until well combined.

    Create a well in the center of the dry ingredients and add in the milk and olive oil. Mix until a soft dough forms. Do not over-knead; a little bit of stickiness is good!

      On a floured surface, gently flatten the dough into a circle about 1-inch thick. Cut the circle into wedges (like a pizza) so that the bread is easier to break apart later.

        Heat a large skillet over low to medium heat. Lightly grease the skillet with olive oil.

          Place the dough wedges in the skillet, ensuring they have a little space between them to expand. Cook covered for about 10-12 minutes, until the bottom is golden brown.

            Carefully flip the wedges over, cover again, and cook for an additional 8-10 minutes, until the other side is also nice and golden and a toothpick inserted comes out clean.

              If using, brush the hot bread with melted butter for a rich flavor.

                Remove from skillet, let cool slightly, and serve warm.
