Nutritious Breakfast Cookies (Vegan)

Ingredients
  

1 cup oats (rolled or quick)

1/2 cup whole wheat flour

1/4 cup almond flour

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp sea salt

1/2 cup mashed ripe banana (about 1 large banana)

1/3 cup maple syrup or agave nectar

1/4 cup unsweetened almond milk

1/4 cup almond butter (or any nut/seed butter of your choice)

1/2 cup dark chocolate chips (dairy-free, if desired)

1/4 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the oats, whole wheat flour, almond flour, baking soda, cinnamon, and sea salt. Mix well.

      In a separate bowl, mix together the mashed banana, maple syrup, almond milk, and almond butter until smooth and well combined.

        Pour the wet ingredients into the dry ingredients and stir until just combined.

          Fold in the dark chocolate chips, nuts, and raisins or cranberries, if using, until evenly distributed.

            Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.

              Flatten each cookie slightly with the back of a fork, as they won’t spread much during baking.

                Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

                  Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
