6 large eggs

1/2 cup milk (or dairy-free alternative)

1 cup spinach, chopped

1/2 cup bell peppers, diced (any color)

1/2 cup cherry tomatoes, halved

1/4 cup onion, finely chopped

1/2 cup shredded cheese (cheddar, feta, or your choice)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Fresh herbs (like parsley or basil) for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil or cooking spray.

    Prepare the Vegetables: In a large mixing bowl, combine the chopped spinach, diced bell peppers, halved cherry tomatoes, and finely chopped onion. Set aside.

      Whisk the Eggs: In another bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined and frothy.

        Combine Ingredients: Pour the egg mixture over the chopped vegetables and gently stir to ensure everything is well coated. Add the shredded cheese and mix again.

          Fill the Muffin Tin: Carefully pour the mixture into the prepared muffin cups. Fill each cup about 3/4 of the way full, as the muffins will puff up while baking.
