2 cups jasmine rice, cooked and cooled (preferably day-old)

1 cup mixed seafood (a blend of shrimp, scallops, and squid)

1 cup assorted vegetables (diced carrots, peas, and bell pepper)

2 large eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons vegetable oil

2 teaspoons garlic, minced

1 teaspoon ginger, minced

2 green onions, chopped

Prepare the Rice: If using fresh rice, cook the jasmine rice and allow it to cool completely, ideally refrigerating it overnight. This helps reduce moisture and prevents the rice from becoming mushy during cooking.

    Sauté Aromatics: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for approximately 30 seconds until their aromas are released.

      Cook the Eggs: Push the sautéed garlic and ginger to one side of the skillet, then add another tablespoon of oil. Pour in the beaten eggs and scramble until they are fully cooked. Once done, incorporate them with the aromatics.

        Add Seafood: Stir in the mixed seafood and cook for 3-4 minutes on medium-high heat until the shrimp turns pink and all seafood is thoroughly cooked and tender.

          Stir in Vegetables: Add the diced vegetables to the skillet and stir-fry for an additional 2-3 minutes, or until they are vibrant in color yet still retain their crunch.

            Combine with Rice: Gently add the cooled rice, breaking apart any clumps to ensure an even distribution. Pour in the soy sauce and oyster sauce, mixing well until every grain of rice is coated in the flavorful sauce.
