2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon crushed red pepper flakes (optional, for heat)

8 ounces fettuccine pasta

1 cup spinach leaves

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. In a large skillet over medium-high heat, add olive oil. Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

      Make the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.

        Thicken the Sauce: Add the grated Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using), stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency.

          Finish the Dish: Add the cooked fettuccine, spinach, and cherry tomatoes to the skillet, tossing everything together to coat in the creamy sauce. Cook for an additional 2-3 minutes until the spinach wilts.

            Serve: Plate the creamy chicken pasta and top with the sliced chicken. Garnish with fresh parsley for a pop of color and added freshness.
