Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

4 cloves garlic, minced

1 cup onion, diced

2 cups baby spinach, fresh

1 lb (450g) gnocchi (fresh or store-bought)

3 cups chicken broth

Zest of 1 lemon

Juice of 1 lemon

1/2 cup heavy cream

1 teaspoon dried thyme

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken thighs, seasoning them with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pot and set it aside.

    Cook Aromatics: In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.

      Add the Spinach: Toss in the baby spinach and stir until wilted, about 1-2 minutes.

        Combine Ingredients: Add the gnocchi to the pot, along with the chicken broth, lemon zest, lemon juice, thyme, and the cooked chicken. Stir everything together.

          Simmer: Bring the mixture to a gentle simmer. Cook for about 10-12 minutes, stirring occasionally, until the gnocchi are tender and the broth slightly thickens.

            Add Cream and Cheese: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix well, allowing the cheese to melt and the sauce to become creamy. Adjust the seasoning with additional salt and pepper if needed.

              Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve hot straight from the pot.
