One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

3 cups low-sodium chicken or vegetable broth

1 lemon (zest and juice)

2 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups spinach, packed

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for a bit of heat)

Instructions
 

Prepare the Salmon: Season the salmon fillets with salt, pepper, and half of the lemon zest. Set aside.

    Cook the Orzo: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the orzo and toast for 1-2 minutes.

      Add Broth: Pour in the chicken or vegetable broth, and bring it to a boil. Reduce the heat to low and simmer for around 8-10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed.

        Sear the Salmon: Push the orzo to one side of the skillet and add the remaining tablespoon of olive oil to the cleared space. Carefully place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes without moving them, allowing the skin to crisp.

          Add Veggies: Flip the salmon fillets gently, then add the cherry tomatoes and spinach around the salmon. Squeeze the juice of half a lemon over everything and sprinkle with the remaining lemon zest. Cover the skillet to allow the salmon to finish cooking, about another 3-4 minutes, until it flakes easily with a fork.

            Finish and Serve: Remove the skillet from heat and let it cool for a minute. Sprinkle with freshly chopped parsley and red pepper flakes if desired. Serve the salmon on a bed of lemon orzo with the veggies mixed in.
